Sesame Chocolate Chip Cookies

Ingredients

Dough

260g all-purpose flour
½ tsp baking soda
1 tsp fine sea salt
170g melted unsalted butter
1 tsp toasted sesame oil
150g dark brown sugar
100g granulated sugar
1 large egg
1 large egg yolk
1 tsp vanilla
170g chopped 60–70% dark chocolate

Coating and finish

⅓ cup toasted mixed black and white sesame seeds
flaky sea salt

Method

  1. Whisk flour, baking soda and salt. In another bowl whisk melted, slightly cooled butter with both sugars until smooth. Add egg, yolk, vanilla and sesame oil; whisk vigorously for one minute.
  2. Fold dry ingredients into wet until only a few flour streaks remain. Fold in all chopped chocolate, including small shards.
  3. Cover and chill dough at least 1 hour and up to 24 hours. Heat oven to 350°F (175°C) and line baking sheets with parchment.
  4. Portion into approximately 3-tablespoon balls and coat each completely in mixed sesame seeds. Space at least 2 inches apart.
  5. Bake about 10–12 minutes, adjusting for size, until edges are golden and centers remain soft. Immediately circle each hot cookie with a larger round cutter to tidy edges. Finish with flaky salt. Cool 5 minutes on sheet, then transfer to rack.
